Ingredients

1 can Cream of Chicken soup, 98% Fat Free
1 cup of Fat-free Milk
1 chicken breast, cut up or cubed
2 cups of rice--any kind will work, but whole grain preferred
Directions
Wisk together the soup and the milk in a bread loaf baking dish. Add the chicken and rice. Add salt and pepper to taste (about a tsp of salt and less of pepper). Cover with foil. Baked in oven (375 degrees) for 15 minutes. Remove foil and stir. Cook an additional 15 minutes for a total of 30 minutes. Serves 2.
