Crazy Chicken Casserole

Ingredients

    24 oz chicken breast
    4 cups broth (any flavor)
    1 can Rotel
    1 can Ranch Style Black Beans
    47 grams chopped Jalapeno peppers
    150 grams chopped white onion
    1 can 98% fat free cream of chicken soup
    1 can corn (drained)
    2 pouches Kashi 7 Whole Grain Pilaf (makes 4 cups cooked)
    6 grams Ranch Seasoning (optional)

Directions

Preheat oven to 375.

In large pot bring broth to a rapid boil. Add pouches of Pilaf and cook according to package directions.

In a bowl combine beans, Rotel, jalapeno and onion.

In another bowl combine corn and cream of chicken soup. Once Pilaf is done add to this mixture.

Cut chicken into bite size pieces and toss with dry Ranch dressing. (Chicken can be left whole is desired. Chicken can also be frozen)

Place Pilaf/corn/soup mixture in bottom of large rectangular baking dish. Cover with bean mixture. Finally, place chicken on top. Cover dish with foil and place in oven. Cook for 45 minutes or until chicken is cooked through.
