Basil Mushroom Chicken in Parchment

Number of Servings: 4

Ingredients

    18 oz boneless skinless chicken breast
    10 basil leaves
    8 oz sliced mushrooms
    2 tsp olive oil
    1 tsp sage
    1 tsp salt
    1 tsp pepper

Directions

Preheat oven to 450 degrees.
Cut two large pieces of parchment paper.
Place half the basil on each sheet, followed by half the mushrooms.
Cut chicken into thick strips (about 3-4).
Place on vegetables.
Drizzle oil over chicken.
Sprinkle sage, salt and paper.
Carefully fold the parchment paper so that it is closed securly (tucking edges underneath).
Place packets on baking sheet.
Bake for 20-30 minutes.
TO serve, open packets and transfer to plates. Drizzle juices over top.
