Zucchini Brownies

Introduction

Ingredients

    2 cups grated zucchini
    2 tsp vanilla
    2 cups whole wheat or whole grain flour
    1 tsp salt
    1/2 cup light olive oil
    1 and 1/4 cup maple syrup
    1/4 cup cocoa
    1/4 tsp baking soda

Directions

Preheat oven to 350 degrees.
Whisk together the dry ingredients.
Add the wet ingredients and mix.
Gently stir in the grated zucchini.
Pour into a greased and floured 9 x 13 inch pan, and bake for 25-30 minutes, testing with a toothpick.
Remove from oven and let cool before cutting into 24 squares.

    These are wonderful! They are moist, yummy & more nutritious than the average brownie! They will be a regular at our house. Not only that, I am going to bring some to Christmas dinner! Thank you so much for sharing.

    I couldn't wait so I tasted the batter off the spoon. The olive oil was very strong and I was skeptical. Once they were baked I had 1 piece, then another, then another x 3. Oops! So much for portion control! They were great! - 6/22/09

    These were really good. I used dark chocolate cocoa powder & added about 2-3 tablespoons more than the 1/4 cup in the recipe so they would be more chocolately. Also added 1/2 cup of vegan semisweet chocolate chips to the dry mixture before mixing the liquid into & it was a really nice touch. - 7/19/09

    These are delicious. I use a little extra cocoa, subbed peanut oil for the olive oil, used part real maple syrup and part "lite", plus added chopped walnuts on top. Calories came out to be the same and these are great healthy snacks! They really would be great with chocolate chips, too! - 1/23/10

    These were good for a healthy recipe. They didn't have enough chocolate flavor for me, but still nice, and I had two servings! I sprinkled half w/chocolate chips right out of the oven and then spread it to make chocolate icing. (Figured I'd have a better chance getting my kids to try them!) - 7/16/09

    My boyfriend made these with his 12 year old daughter and I had to throw most of them away. They were not sweet AT ALL and the didn't have a whole lot of cocoa flavor. I agree with the comment about that i haven't been dieting long enough for these to taste good. - 1/20/09

    Well, these brownies came out extremely moist. I used sorghum molasses, 1/4 tsp salt, two 9x9 pans, and spelt flour. I only had sorghum. I am watching my salt intake. I didn't have 9x13 pan. I only bake with spelt flour. I cooked each pan 15 min with no problems. My brother ate it anyway w/zucchini! - 12/12/07

    Ok taste, semi-moist, just not sweet enough for me. I added sugar-free chocolate frosting (used 3/4 of a can for 9x13 pan of brownies). Much better! My kids loved them after this! - 10/15/07

    Edible but tasted a lot like sand. My wheat flour was a bit old and very coarse ao I bought new, smoother wheat flour and will try it again. My friend LOVED it and she ate the whole pan. - 3/12/07

    I only had a small zucchini on hand so I halved the recipe. I also only have regular olive oil, so I used half olive oil and a quarter canola oil and a quarter applesauce. They are yummy, not too sweet, and kill the chocolate craving. I think even my veggie hating husband might like these! - 7/24/10

    Maybe I did something wrong, but these weren't sweet at all - good for some I guess, but I need a little sweetness & flavor! Very moist and brownie/cake-like, just not really good flavor. I ended up frosting them to make them edible - kind of defeats the purpose! : ( - 8/12/09

    I used all they said--and real maple syrup, too, so it's all organic and no refined sugar. And I had to add THREE to my tracker! Loved them, and that was still do-able. And now I'm going to try a carrot cake with whole grain and maple syrup... - 4/25/08

    Very nice! also, if you add about half a cup of pecan halves (chop them after you measure), it will give it a little something extra and will only add about 7 calories per serving. - 4/24/08

    Ok, I made them, well lets just say maybe I have not been dieting long enough, because they were not so great. I am taking them to work tomorrow. I work for a gourmet chocolate company,lol! They smelled great cooking, but had no taste & I used all fresh ingredients it cost me about $9 not worth it - 4/24/08

    I followed the directions to the T and these have to be the nasties brownies I have EVER tasted. They didnt taste anything like a brownie. I wouldnt recommend anyone wasting time making these brownies. - 12/12/07

    These were more like a cake brownie than the fudge type. But the flavor was incredible....I did add about 1/3 C. of Chocolate Chips as was suggested. will definately make again. DH wanted frosting, so next time I'll frost 1/2 of the pan and leave the other 1/2 for those that prefer them unfrosted. - 7/28/11

    from a baker... don't use anything other than LIGHT olive oil or canola because of the smoke point...other oils can leave an off taste and actually burn in the recipe. another suggestion: add chili powder for some kick! - 1/19/09

    Next to No Pudge brownies, I probably wouldn't make these since those are easy, taste great and are healthy. With that being said, could you substitute flaxseed for the oil??? Just a thought because we make our pancakes and waffles with flaxseed in place of oil. - 1/19/09
