Ingredients

    Ingredients:


    Grouper (fish), 0.5 fillet (remove)
    Garlic, 3 cloves (remove)
    Green Peppers (bell peppers), 0.5 cup, chopped (remove)
    *Peppers, sweet, red, fresh, 0.5 cup, chopped (remove)
    Pepper, black, 1 tsp (remove)
    *Cumin seed, 1 tsp (remove)
    Oregano, ground, 1 tsp (remove)
    Paprika, 0.5 tsp (remove)
    *Lemon Juice, 0.25 cup (remove)
    Salt, 0.5 tsp (remove)
    Nutmeg, ground, 0.5 tsp (remove)
    Olive Oil, 1 1tsp (remove)
    Red Ripe Tomatoes, 0.5 cup, chopped or sliced (remove)
    Tomato Sauce, 0.25 cup (remove)
    *Fat Free Mozzarella, 0.25 cup (remove)
    Baby Carrots, raw, 6 medium (remove)
    Celery, raw, 0.25 cup, diced (remove)

Directions

1) marinate the fish (could be any type of fish fillet) with olive oil, lemon, cumin, garlic(crushed), oregano, paprika, salt , nutmeg and black pepper and keep either over night or 30 minutes to get all the flavor

2) in an oven dish, put aluminium foil and add your fish and then put all your chopped vegetables and carrots along with the celery

3) add the tomato and tomato paste on top then close the foil well and place in medium oven temperature

4) after 20 minutes, take out the mixture from foil and place in dish again and sprinkle the cheese and grill back for about 5 minutes to become red

Serve with rice and fried onions
