Parmesan Crusted Talapia

Ingredients

    Talapia - 4 40z. fillets
    Panko bread crumbs - 1/4 cup
    Parmesan cheese - 1/4 cup
    Parsley, fresh - 1 rounded TBS
    Cayanne Pepper - 1/2 - 1 tsp
    Spike - 1/2 - 1 tsp
    Classico olive oil - 1 TBS
    Lemon - juice of 1 lemon

Directions

Makes 4 dinner sized portions. Rinse and pat dry fillets. In shallow pan mix together bread crumbs, cheese, parsley and spices. Coat fish on all sides well. Saute med high in olives oil, until golden and flakes when pierced with fork, apx 7-10 minutes. Flip only once to keep fish from breaking. Squeeze with lemon juice. Serve with a mixed green salad and brown rice for a delicious meal!

    What is "spike"?!?!? Please advise.

    Spike is an all natural seasoning usually found in the organic section of the grocery. I use it on just about everything from soups, fish, poultry, meat and veggies. Great in eggs too.

    Yumm! Dipped the fish in egg whites for the breading to stick. Recommend using grated vice shredded Parmesan. The fish was moist and succulent; the lemon adds a delicious zing. This will stay a favorite for me. Pls be aware Spike contains soy for those allergic; Mrs. Dash is prob good alternative. - 10/18/10

  • WOW is right! I love fish and my wife hates it. She agreed to cook this for me and after a few improvisions, it was fantastic. My wife did not have spike or cayanne, lemon or bread crumbs. She used crushed unsalted crackers, cajun spices, and squeezed orange. It was so good she even liked it! - 10/18/10
