An easy chicken salad I like to make, usually for lunch. It's a great alternative to making chicken salad sandwiches or having crackers... you're reducing the carb intake. An easy chicken salad I like to make, usually for lunch. It's a great alternative to making chicken salad sandwiches or having crackers... you're reducing the carb intake.
Number of Servings: 1

Ingredients

    1 Chicken Breast, boiled and shredded
    3 Celery Stalks, chopped
    3 Tbsp of chopped onion
    1 Large Red Apple, cored and diced
    2 Tbsp of Fat Free Cream Cheese
    2 tsp. of Yellow mustard

    4 Romainne Lettuce inner leaves

Directions

Take all of the ingredients except the romainne lettuce leaves (make sure everything is nicely chopped, diced, or shredded) put them in a bowl and mix them up. Then take the salad mix and fill the lettuce leaves. That's it.

Serves 2 people for lunch.
