Pumpkin Lentil Soup

Ingredients

    Lentils, 1 cup
    Carrots, raw, 3 sliced
    Celery, raw, 4 stalk, sliced
    Broth or Bouillon, 8 cup
    Pumpkin, canned, without salt, 2 cup
    Orange Juice, 1/2 cup
    Olive Oil, 2 tbsp
    Onions 2, chopped
    Honey 1 tsp
    Cinnamon
    Orange Zest

Directions

Soak lentils for 15 minutes. Heat olive oil. Add onion and cook until soft. Add honey and cinnamon; heat. Add broth, carrots, celery and bring to a rolling boil. Then add lentils and orange zest. Cook for 40-45 minutes. Add pumpkin and orange juice; cook 10 more minutes. Serve warm with sour cream if desired.
