Shrimp Scampi for Garlic Lovers

Shrimp Scampi for Garlic Lovers

Introduction

Yummy and fast. Great with a side of roasted vegetables. Yummy and fast. Great with a side of roasted vegetables.
Number of Servings: 6

Ingredients

    1 lb. frozen (defrosted) or fresh shrimp
    5 cloves garlic or to taste
    1/8 cup olive oil
    2 tbsp parsley plus more for garnish
    juice of 1 lemon plus lemon wedges for serving
    salt and pepper to taste (nutrition info has 1 tsp of each)

Directions

Warm olive oil over low heat. Add garlic and saute until golden. Turn heat to medium high. Add shrimp, salt, pepper, and parsley. Turn the shrimp when the bottom side is pink. Cook on second side until pink on the outside and opaque throughout (cut one open to check), about 10 minutes. Then add lemon juice and cook 30 seconds more. Remove from heat and serve right away with more parsley and lemon wedges.

  • I use even more garlic and use 1/2 light I Can''t believe It/s Not butter and 1/2 olive oil. I use it as a sauce for baked spaghetti squash instead of pasta, - 1/8/12
