Secret Chocolate Cake

Introduction

This is so simple you just mix it together. It is the perfect kids birthday party cake! The original recipe uses 2 cups of sugar which is too sweet for me. The secret is pouring boiling water over the other mixed ingredients this smooths the mixture out so you can do it easily by hand...I serve this with 1/3 cup vanilla ice cream and 2 Tbls. Number of Servings: 20

Ingredients

    1.5 cup Whole Wheat or White flour
    3 tsp baking powder
    1 cup cocoa unsweetened
    1 cup canola oil
    1.5 cup sugar
    4 eggs
    1 cup boiling water

Directions

Mix all ingredients together by hand or mixer, except for the boiling water. Then add the 1 cup of boiling water to and do a final mix - until mixture is smooth.
Bake 350 for 40-60 minutes
I like to put in a sprayed rectangle pirex - it is easier to calculate/ cut 4 X 5 = 20 squares of cake that way. Then I quiz the kids how much calories are in a slice ! It works out 152. I prefer to use the whole wheat flour.
