20 cups spring mix salad
2 hard boiled eggs, mashed
1 cup chopped pecans, toasted
1 can rice noodles
Dressing
1/2 cup sugar
1/2 cup oil
6 Tbsp cider vinegar
1 tsp salt
1/2 tsp black pepper
Directions
hard boil eggs
toast pecans
for dressing:
mix ingredients until sugar is disolved
assemble salad
in large bowl combine salad, pecans, rice noodles, eggs and dressing--toss to coat and serve immediately
