6 c. fresh spinach 1 lb. cooked shrimp 1 1/2 c. frozen peas, cooked then cooled 1 1/2 c. chopped apples 1/2 c. raisins (packed) 1 c. seasoned croutons
Cook the frozen peas first and allow to cool in the refrigerator while preparing the rest of the ingredients. If using raw shrimp, boil these according to package directions and allow to cool also. For convenience, you may use already cooked shrimp, thawed from frozen. Toss all ingredients in a medium salad bowl. Serve with salad dressing of choice. Makes 4 servings, about 2 c. each.
