Sweet Oatmeal Muffins with Pears & Walnuts

Introduction

I had been looking for a healthy and hearty muffin recipe with lots of texture and played around until I came up with this one. The apple butter give these muffins a lot of moisture. Depending on the moisture in the air I have had to add as much as 1/2 cup extra flour to keep the batter from being too runny.
Nutritional information is prepared without the optional chocolate chips and using the egg beaters not whole eggs.

Ingredients

    3/4 cup brown sugar (not packed)
    1/4 cup chopped walnuts
    1/2 teaspoon ground cinnamon
    1 teaspoon ground nutmeg
    1 cup quick cooking oats
    1 cup whole-wheat pastry flour
    1/3 cup wheat germ
    1 teaspoon baking soda
    1 teaspoon salt
    1/4 cup canola oil
    1/2 cup egg beaters (or 2 large eggs)
    1 cup apple butter
    1 teaspoon vanilla extract
    3/4 cup fatfree milk
    1 Firm Pear peeled, cored and cut into 1/4-inch pieces
    Optional:
    1/4 cup chocolate (or carob) chips

Directions

Preheat oven to 400 degrees Fahrenheit.
Place paper cups in a 12 capacity muffin pan. Whisk together the oatmeal, whole-wheat flour, brown sugar, wheat germ, baking soda and salt. In a separate bowl, whisk egg with milk and oil to combine. Whisk in the applesauce and vanilla.
Stir in the flour mixture until just combined. Let sit for 5 minutes. Gently stir in the apple chunks and walnuts. (also add optional chocolate or carob chips at this time)
Pour the batter into the prepared muffin pan, be sure not to fill each tin to the top as the batter will rise and you don't want them to overspill. Bake for 20 minutes or until a wooden pick inserted in center of a muffin comes out clean.
Let cool on a wire rack for 15 minutes.
A second set of just 4 muffins will be needed.
Makes 16 muffins. (or just 8 jumbo, nutrition calculated for regular size muffins)
