Ingredients

39 oz. spicy V8 juice
29 oz. canned chopped tomatoes with juice
2 cups cooked barley
1 cup peeled diced cucumber
1 cup diced red bell pepper
1/4 cup chopped cilantro
1/4 cup chopped scallions
1 ripe avocado, diced
Directions
Combine all ingredients except avocado and chill overnight. To serve, garnish with avocado.
