Vegetarian Sausage Breakfast Skillet

Introduction

This is easy to prepare ahead of time. I took some old Lean Cuisine trays that I had saved, divided this into 4 servings, and put them in the fridge for an easy and quick breakfast ahead of time! Ingredients

    Morningstar Farms Breakfast patties, 8
    Red potatoes, 1.5 cups cubed (about
    Onions, raw, 1 cup chopped
    Mushrooms, fresh, roughly 2 cups sliced (1 standard size supermarket package)
    White or marsala wine, approx 3 oz
    Garlic, 4 tsp, chopped
    Olive oil, 1.5 tbs.
    Season salt and pepper to taste

Directions

I usually mult-itask and do the microwave stuff while I'm sauteeing the veggies.
Cook the cubed potatoes in the microwave with water to cover on high for 6 minutes. Then cook the vegetarian patties in the microwave, 4 at a time, for about 2 minutes. Chop up or grind up the patties in a food processor so that you have "sausage crumbles".
Saute the mushrooms and onions in the olive oil, using a large nonstick skillet. When the mushrooms have softened and the onions are translucent. Add the cubed potatoes and continue to saute until the potatoes are slightly browned. Add the wine a little at a time to deglaze the pan and keep the veggies from sticking. (try the Marsala--it's yummy!) Add the cooked and crumbled vegetarian sausage and mix well.

Variations: you could add some shredded cheese or scrambled egg substitute--or both! Just don't forget to add the calories!
