Creamy Orzo with Mushrooms

Introduction

This makes a wonderful side dish, but it also makes a great entree. Just add one pound of cooked shrimp or chicken to the orzo, just before adding the sauce and cheese. Yummy! Ingredients

    1 pound uncooked orzo
    2 tablespoons olive oil
    2 cups sliced mushrooms, any variety
    3 dried shitake mushrooms (or equivilant in fresh)
    1/2 cup chopped onion
    4 cloves garlic, minced
    3/4 cup 1% milk
    1/2 cup fat free half and half
    1/2 cup heavy cream
    1 1/2 tablespoons cornstarch
    1 tablespoon dried parsley
    1/4 teaspoon fresh ground pepper
    1/4 teaspoon light salt
    1/4 cup reduced fat grated parmesan cheese


Directions

1. Place shitake mushrooms in a bowl. Pour 1 cup of boiling water over the shitake mushrooms and allow to rehydrate for 15 minutes. Drain and squeeze excess water from mushrooms.


2. While the mushrooms are soaking, cook pasta according to package directions. Drain and set aside.


3. In a large skillet heat the oil and saute the mushrooms, onion, garlice and spices until the fresh mushrooms are tender.


4. In a seperate bowl, add teh cornstarch to the milk, mix well and then add the half and half and cream.


5. Add the milk mixture to the skillet with the mishrooms. Bring to a boil stirring constantly, reduce heat and simmer for 5 minutes, stirring constantly.


6. In a large bowl, add the mushroom mixture to the orzo. and then stir in the parmesan cheese until well incorporated. Serve hot.


Optional: 1 pound of cooked shrimp or chicken to make 4 entree size servings.
