Chicken with Dijon Cream Sauce

Introduction

This recipe was originally written using Pork Chops. I've switched it to fit my families love for chicken. The sauce is great over couscous! I usually double it for this reason. Number of Servings: 4

Ingredients

    4 chicken breasts
    1/2 tsp salt
    1/2 tsp pepper
    1/3 C chicken broth
    1 1/2 T Dijon Mustard
    1/3 C evaporated milk or half and half

Directions

Sprinkle chicken w/ salt and pepper. Brown in skillet. Remove but keep warm. Add broth to skillet and loosen up browned bits. Combine mustard and evaporated milk; add to skillet. Reduce heat and simmer for 7 minutes or until sauce is thickened slightly. Spoon over chicken. Serve.
