Yvonne's Rhubarb-a-licious pie

Introduction

This is my own pie. I was inspired by a favorite memory of my own mother's rhubarb pie but no one can find the recipe. This is the flavor and texture I remember.
MAKES 2 PIES
This is my own pie. I was inspired by a favorite memory of my own mother's rhubarb pie but no one can find the recipe. This is the flavor and texture I remember.
MAKES 2 PIES

Number of Servings: 16

Ingredients

    8 c rhubarb diced

    2 1/4 c sugar
    1 1/2 T flour
    1 1/2 T tapioca
    1 1/2 T corn starch
    1/2 t salt
    3 lg eggs
    2 t vanilla extract

    2 pie crusts (MAKES TWO PIES)

Directions

Chop rhubarb and set aside.

Mix sugar, flour, tapioca, corn starch and salt in small bowl.

In a large bowl, beat eggs and vanilla.

Add dry ingredients to the egg mixture. Mix well

Now add the rhubarb and mix to coat rhubarb well.

CRUST:
This is what I do for the crust.

unroll one crust and use rolling pin to "THIN" out the crust somewhat.
Spray pie pan with cooking spray then place the crust in pie plate and tear off the edges.
Reroll the part you tore off to make lattice on the crust. This helps keep calorie count down.


Bake 15 minutes at 400
then 45 minutes at 350

Cut each pie into 8 pieces
