Yvonne's Rhubarb-a-licious pie

Introduction

This is my own pie. I was inspired by a favorite memory of my own mother's rhubarb pie but no one can find the recipe. This is the flavor and texture I remember.
MAKES ONE DEEP DISH PIE
This is my own pie. I was inspired by a favorite memory of my own mother's rhubarb pie but no one can find the recipe. This is the flavor and texture I remember.
MAKES ONE DEEP DISH PIE

Number of Servings: 8

Ingredients

    8 c rhubarb diced (2 16 oz bags frozen)

    2 1/4 c sugar
    1 1/2 T flour
    1 1/2 T tapioca
    1 1/2 T corn starch
    1/2 t salt
    3 lg eggs
    2 t vanilla extract

    2 pie crusts (makes one deep dish pie)

Directions

Chop (thaw) rhubarb and set aside.
In a large bowl, beat eggs and vanilla.
Add sugar, flour, tapioca, corn starch and salt.

Now add the rhubarb and mix to coat rhubarb well.

CRUST:
Spray pie pan with cooking spray then place the crust in pie plate.
Pour the rhubarb mixture into the pie and cover with the second crust.
Press edges together and vent the top crust.
Brush with a little milk and sprinkle just a little sugar on top.

Bake 15 minutes at 400
then 45 minutes at 350

Cut pie into 8 pieces
