Dougs Taboulli

Ingredients

    1 C Bulgur, dry
    1 C Water
    1 C Parsley, coarsely chopped
    12 Mint Leaves coarsely chopped
    Cucumber (peeled), 1 large (8-1/4" long)
    1/2 med Onion, chopped
    3 oz Lemon Juice
    4 tbsp Olive Oil
    dash Salt,
    1/8 tsp Pepper, black (to taste)
    6 Cherry Tomatoes, Fresh, coarsely chopped

Directions

Soak dry bulgur in boiling water 30 mins, squeeze out any excess water
combine all ingredients in a large bowl and toss.
serve chilled.

  • Thanks, Doug! MY FAVORITE salad!! I always add lots of garlic and I have found that sticking the bulgur/water mixture in the fridge makes it bulk up faster with less excess water.(Make sure it is air tight) Thank you so much for posting this... such a healthy choice...
