Very Vanilla Almond Oatmeal Bars

Introduction

Number of Servings: 9

Ingredients

    2 cups Original Quaker Oats
    3/4 cup Vanilla Almond Milk
    3 oz raisins
    1/4 cup ground almonds
    1/4 cup ground flax meal
    1/4 cup no sugar added apple sauce
    2 tbsp ground cinnamon
    1 tsp pure vanilla extract
    2 tbsp honey
    1 tsp baking powder
    non-stick cooking spray

Directions

Preheat your oven to 350 degrees. Grease a 9x9 square glass baking dish.

In a separate bowl, mix the oats, flax, cinnamon, and baking powder together until combined. Add the almond milk, vanilla, honey, apple sauce, and raisins (everything except the ground almonds!) to the dry ingredients and mix until combined.

Spread the mixture evenly in the glass baking dish. Sprinkle the top with the ground almonds, pressing them slightly into the mixture. Place in the center rack of the oven.

Bake for 20 minutes at 350 degrees. Remove from the oven and allow to cool before cutting to make it easier.

Once cooled, cut into 9 equally-sized squares. One square per serving.
