Homestyle Pork and Potatoes in Sweet Sauce

Introduction

I came up with it tonight and it was a hit. I came up with it tonight and it was a hit.
Number of Servings: 4

Ingredients

    2 boneless pork chops
    -----
    Sauce:
    3/4 cup brown sugar
    3 tbsp smart balance light buttery spread with flax oil
    1 can cream of chicken soup
    -----
    Potatoes:
    5 raw potatoes
    .25 tbsp butter, salted
    1/2 cup nonfat milk
    -----
    Pork chop:
    1/2 tbsp Salt
    1/4 tbsp pepper
    And any other seasonings that you prefer (though not included unless listed here).


Directions

Trim 2 boneless pork chops - slice in half length wise - this is to thin out the chop, not break it into two pieces. Season as desired.

In a bowl melt 3tbsp smart balance buttery spread with flax oil. Then combine 3/4 cup of brown sugar and 1 can of cream of chicken.

Heat oven to bake @ 350.

Place pork chops into oven safe bowl or pan. Pour the brown sugar, smart balance, cream of chicken mixture on top.

Place in oven and cook for 45 min - 1hr.

While pork is cooking peel and chop all potatoes and then bowl for 15minutes. Take out and drain and then mix with milk and butter to make mashed potatoes.

When finished pour pork and sauce on top of mashed potatoes.

Makes 4 servings.
