Hamburger Casserole Full of Veggies

Introduction

Simple hamburger casserole, nice and crunchy texture, with just a bit of kick. Simple hamburger casserole, nice and crunchy texture, with just a bit of kick.
Number of Servings: 4

Ingredients

    1 lb lean hamburger
    1 medium onion, chopped
    about 2 cups frozen vegetables (not peas & corn)
    1 can low fat cream of mushroom soup
    1 taco seasoning packet
    2 cloves garlic, minced
    1 can mushrooms, water reserved

Directions

In a non-stick pan, gently fry onions with water from canned mushrooms until just softened. Add hamburger and garlic, cook until almost done. Drain fat. Add taco seasoning mix, stir well on low heat. Stir in soup, then remaining ingredients. Bake at 350F for 40 minutes.

Serve with a salad or whole wheat pasta.

Makes 4 servings.
