Maria's Lemon Chicken Pasta

Introduction

Number of Servings: 8

Ingredients

    4 boneless skinless chicken breasts (diced)
    1 box barilla whole grain penne pasta
    1 1/2 tsp minced garlic
    1/2 tsp red pepper flakes
    3 tbs olive oil
    1/2 cup grated parmesan
    2 tbs lemon juice
    salt/pepper to season chicken

Directions

Cook pasta in boiling salted water, until al dente.
Drain well. Season chicken with salt & pepper. Heat a large saute pan over medium high,with 1 tbs olive oil and add chicken until completely cooked. Remove chicken and set aside. Add the garlic and red pepper flakes to saute pan with 2tbs olive oil. Add the cooked pasta and turn heat off. Mix all together. Add the chicken to saute pan with salt and pepper to taste, add lemon juice, mix well. Top with parmesan.

Makes: 8 1 cup servings
