Number of Servings: 4

Ingredients

    6 oz (half bag) enriched egg noodles
    1 can jack mackerel
    1/2 medium onion (2-1/2" dia)
    3 cloves garlic
    1 tsp. fennel seed, ground
    5 leaves fresh or one tsp. dry basil
    Juice of 1 lemon
    2 Tbsp. canned capers
    1 1/2 cup (14.5 oz.) diced tomatoes, Italian style
    1 cup canned artichokes
    1/2 cup julienned sun dried tomatoes
    1/2 tsp. black pepper

Directions

Cook the egg noodles according to directions. In skillet, add ingredients in order, sauteeing one at a time. Drain jack mackerel and split fillets so you can remove spine and rib cage bones, then break fish into chunks. Pour briny vegetable mixture over noodles and fish and gently toss.

This recipe contains almost a 3rd of your daily calcium without any dairy products.

Makes four very generous two cup portions. Serve with grated parmesan cheese, if desired.
