Southwest Salad

Introduction

Light and fresh! Light and fresh!
Number of Servings: 6

Ingredients

    2 cups romaine lettuce, shredded
    6 cups green leaf lettuce, shredded
    1/2 cup scallions (green onions), chopped
    1/2 cup red onions, chopped
    3 cups frozen yellow corn, thawed
    One can (1.75 cups) black beans, drained, rinsed
    1.25 pounds boneless, skinless chicken breast, cooked with dash of seasonings
    1 cup shredded colby/monterey jack cheese
    Dressing:
    1/2 cup (8 T) Fat Free sour cream
    1 tsp cayenne pepper
    1 tsp ground cumin
    1 tbsp salsa, or to taste

Directions

Mix all of your vegetables and chicken in a large bowl. For the dressing: mix all listed ingredients together in a small bowl. Pour over prepared salad bowl and toss to distribute evenly. Add shredded cheese to entire bowl, or individually on top of each plated serving.
