Wheat-Free, Dairy-Free Oat Pancakes

Submitted by: ROSEY4EXCLAIM

Introduction

I came up with this by altering a standard pancake recipe, and my sister said it's better than regular pancakes! The soy milk gives it great flavor. I came up with this by altering a standard pancake recipe, and my sister said it's better than regular pancakes! The soy milk gives it great flavor.

Ingredients

    1 egg
    1 cup soy milk
    2 tablespoons canola oil
~ 2 cups oat flour (made by grinding up regular oatmeal)
    1 tablespoon honey
    1 teaspoon baking powder
    1/2 teaspoon baking soda
    1/2 teaspoon salt

Directions

Beat egg; add remaining ingredients in order listed and beat with rotary beater until smooth. (When adding oat flour, add just enough to make it the right consistency, which is about two cups. It should be thick, but still able to pass through the tines of a fork.)

Grease heated griddle if necessary. To test griddle, sprinkle with a few drops of water. If bubbles skitter around, heat is just right.

Pour batter from the tip of a large spoon or from pitcher onto hot griddle. Turn pancakes as soon as they are puffed and full of bubbles but before bubbles break. Bake other side until golden brown.

Makes about eight 5-inch pancakes.
