Sweet and Sour Borscht with Dilled Meatballs

Ingredients

Canola oil - 2 tbsp
Onion - 1 medium, chopped
Garlic - 3 cloves, minced
Beef Boullion - 4 tsp
Water - 5 C
Tomatoes - 28 oz, stewed
Cider Vinegar - 1/4 C
Brown Sugar - 3 tsp, packed
Salt - 1 3/4 tsp
Pepper - 1/2 tsp
Cabbage - 1/2 small head, thinly sliced
Dill - 1 1/2 tsp, dried
Ground Sirloin - 2 1/2 lb
Sour cream, garnish as desired
Directions
1. In a 6-qt saucepan, heat oil and saute onion and garlic.
2. Add beef boullion, water, tomatoes with their juice, vinegar, brown sugar, 1 t salt, and 1/4 t pepper.
3. Bring to a boil.
4. Reduce heat, add cabbage and simmer for 10 minutes.
5. Combine ground beef, dill, remaining salt and pepper, mix until well blended.
6. Form 24 meatballs, dropping each into the simmering broth.
7. Cover and cook meatballs through, about 10 minutes.
8. Serve immediately, garnished with sour cream
(makes 12 - 2 cup servings)
