Zone Chili Relleno Chicken

Number of Servings: 4

Ingredients

    2 onions (or 1 onion and 1 pepper)
    1 TB Garlic
    2 tsp cajun spices
    1 TB EVOO
    0.8lb chicken
    1 15oz can black beans
    1/4 cup fat-free sour cream
    1.3 cups shredded cheese
    4 corn tortillas

Directions

Heat oven to 350 degrees. Saute onion(s) and/or pepper with garlic in a skillet with EVOO until softened. Add black beans, spices, chicken, and sour cream and cook until chicken is done. You can either transfer the mixture to an 8x8 glass dish, or keep it in the skillet if your skillet is large enough and ovenproof up to 350 degrees. Pour egg-whites over the mixture, sprinkle with cheese, and bake in oven for 22-25 minutes. Cut the tortillas into 2-inch strips and sprinkle over the mixture, and cook/broil until the tortilla chips are crispy (about 10 more minutes). Makes about 4 3-block meals.
