Tomato & Avocado Salsa

Introduction

Just a basic salsa but I like to add Avocado. Yes it's high in fat, but it's the HEALTHY kind. Very good for lowering bad cholesterol. Just a basic salsa but I like to add Avocado. Yes it's high in fat, but it's the HEALTHY kind. Very good for lowering bad cholesterol.
Number of Servings: 5

Ingredients

    2 Large tomatoes
    5 green onions
    1/2 sweet onion (small)
    1 celery stalk
    1 Avocado
    1/4 cup fresh chopped cilantro
    juice from one lemon
    1 tbsp vinegar (I like to use the vinegar from a jar of pickled hot peppers)
    salt

Directions

Dice all ingredients very finely. Add jalapeno if you like it hot. Squeeze on lemon juice & add vinegar (if you don't want it too hot but want a bit of peppery flavour, you can try add the vinegar from a jar of pickled peppers).
Add salt. Allow to sit for at least 1/2 hr before serving. Note - this one is very juicy. If you want it less juicy, you can strain it or use roma tomatoes and only juice from 1/2 lemon.

Makes 5 - 1 cup servings.
