Introduction

These were created to try and keep the carb count low. They are still a higher carb, but they are reduced, lol. A total of 18.3 net carbs per 3 cookies. These are good sized cookies to boot. Number of Servings: 20

Ingredients

    2 c soy flour
    2 c soy protein isolate
    1 c whole wheat pastry flour
    2 c flaxseed meal
    1 c shortening
    3 tbs baking powder
    3 large eggs
    1 c splenda
    1/2 c splenda brown sugar blend
    3 tbs cinnamon
    1 tbs nutmeg
    1 c applesauce

Directions

Mix all dry ingredients, add eggs, shortening, and oil. Blend then start adding water until you get dough. Spoon onto ungreased baking sheet and bake at 425f for about 12 minutes. Makes approx: 4 dozen
