Chicken Veggie Stir Fry with Fried Rice

Introduction

A great way to use up that leftover rice, makes a healthy and delicious meal! A great way to use up that leftover rice, makes a healthy and delicious meal!
Number of Servings: 6

Ingredients

    3 boneless skinless chicken breasts thinly sliced
    1 tsp garlic powder
    1 Tbsp water
    1 10 oz package frozen stir fry veggies
    4 cups cooked white or brown rice (cold)
    1 small onion chopped
    2 Tbsp Extra Virgin Olive Oil
    3 Tbsp Lite Soy Sauce


Directions

-In a large frying pan, heat 1 Tbsp olive oil, add chicken and garlic powder, cook until no longer pink
-Add 1 Tbsp water
-Add frozen veggies, cover 5 mins or until tender
-Stir in 1 Tbsp soy sauce, cook for 1 more min
-Set chicken and veggies aside
-Cook onions in remaining oil until transparent
-Add rice stirring frequently until it starts to stick together
-Stir remaining soy sauce into rice until evenly distributed
-Serve chicken and veggies on top of rice
