Easiest Taco Salad

Number of Servings: 4

Ingredients

    1 lb ground beef
    1 lrg onion
    2 tblsp taco seasoning
    1 can condensed tomato soup
    2 cups shredded Cheddar or Mex blend cheese
    1 cup sour cream
    1/2 head lettuce
    1 large tomato
    1 can black beans
    4 cups regular or reduced fat tortilla chips
    (optional) Toppings, cheese, salsa, etc.

Directions

1. Brown beef in an extra deep 12-inch skillet.
2. Meanwhile, peel and coarsely chop the onion, adding it to the skillet.
3. Cook, stirring often until the meat is crumbled.
4. Add the tomato soup, taco seasoning, shredded cheese and sour cream. Cook until cheese melts.
5. Tear the lettuce into bite sized pieces. Chop the tomato into small chunks. Set aside.
6. Rinse and drain the black beans.
7. Divide the tortilla chips and lettuce among four plates.
8. Pour 1.2 cup of the meat filling over the lettuce on each plate. Sprinkle beans and tomato chunks evenly over the filling.

Serve the salads, letting each person garnish as desired.
