Herby Fish Burgers

Introduction

You could use any fish you want, the original recipe called for salmon, but we like a milder fish. I also use cayenne pepper instead of black pepper in almost everything, but experiment with what you like. Ingredients

    Tilapia, 16 oz
    Bread crumbs, dry, grated, seasoned, .25 cup Salt, .5 tbsp
    Dill weed, fresh, 0.5 cup sprigs
    Hellmann's Olive Oil Mayonnaise, 3 Tbsp
    Egg, fresh, 1 large
    1 jalapeno pepper, optional
    Parsley, 4 tbsp
    Cilantro, raw, 4 tbsp
    Fresh Lime Juice 3 tbs
    Vegetables, Mixed Salad Greens,
    Hamburger buns
    Cooking spray
    Spices to taste

Directions

Mix 2 tbs of the mayo with 2 tbs of each of the herbs, 1/2 tsp salt, and lime juice. Put in the fridge. In a food processor, add the raw fish, 1 tbs mayo, the rest of the herbs and lime juice, the jalapeno pepper (cleaned) the 1/4 cup of breadcrumbs and the egg. Pulse until mixed, but still somewhat chunky. Form 4 patties and fry them in a pan that was sprayed with the cooking spray. Put them on a bun with the mayo mixture and some mixed greens.
