Lentil Salad

Introduction

This salad is quick, easy and delicious. Perfect to have on hand for snacking or a quick meal. This salad is quick, easy and delicious. Perfect to have on hand for snacking or a quick meal.
Number of Servings: 5

Ingredients

    2 cups lentils cooked water with a bay leaf
    1/4 cup chopped onion
    3 medium carrots, chopped
    1 red bell pepper, seeded and chopped
    2 Tbsp. extra virgin olive oil
    Juice of one lime
    Salt and pepper to taste
    1/2 tsp. garlic powder
    Cayanne pepper to taste

Directions

Cook the lentils in water with one bay leaf until soft. Drain and set in a large bowl.

Add in the remaining ingredients and toss to coat. Serve immediately or refridgerate for a few hours.

This is great in lettuce cups or in a wrap.
