PB-Walnut Granola

Introduction

Ingredients

    3 1/2 c oatmeal
    1/2 c walnuts
    2.5 c Kashi GoLEAN cereal
    2 T honey
    1/3 c applesauce, unsweetened
    1/3 c banana, mashed
    1/2 c peanut butter
    1/3 c brown sugar, packed
    3/4 t salt
    1/4 t cinnamon
    1/2 c Dark Chocolate Chips

Directions

Preheat the oven to 325 F. Line a baking sheet with parchment paper.

In a large bowl, combine the oatmeal, walnuts and cereal. In another bowl, whisk together the honey, applesauce, mashed banana, peanut butter, brown sugar, salt, and cinnamon until smooth. Pour the wet ingredients into the dry ingredients and stir until evenly coated. Spread onto the prepared baking sheet in an even layer.

Bake for 30 minutes. Remove from oven and turn the granola over - you'll have to do it in pieces. Bake for 15 minutes. If some granola is still damp, remove the dry granola and bake the remaining 5-10 minutes longer until done. Do not to over-bake. Cool on a wire rack.

Once the granola is cool, crumble into a plastic bag. Add in the dark chocolate chips and shake well to combine. Seal and store.

Makes 14 half cup servings.
