Apple, Walnut, Cranberry Salad

    2 teaspoons fresh lemon juice
    1/2 cup vanilla or plain low fat yogurt
    1/4 teaspoon curry powder
    1/2 to 1 teaspoon sugar
    2-1/2 tablespoons extra-virgin olive oil
    salt and pepper (to taste)
    1 pkg (5oz) Dole Baby Lettuce OR 1pkg (7oz) Baby Romaine Blend Salad Blends
    1 Green Apple halved, cored and thinly sliced
    1/2 cup walnuts, toasted and coarsely chopped
    1/3 cup dried sweetened cranberries

Makes 4 servings

Mix Lemon Juice, yogurt, curry powder and sugar in a small bowl. Whisk in olive oil and season with salt and pepper.

Combine salad blends, apple slices, walnuts and cranberries in a small bowl. Add yogurt dressing; gently toss to coat.

Note: Sliced or shredded chicken is a great addition to this salad.
