Bacon n' Cheese Strata

Introduction

Quick to assemble and wonderful to serve for breakfast, brunch or dinner. Add some baked cinnamon/sugar apples and biscuits as sides dishes = YUMMY! Quick to assemble and wonderful to serve for breakfast, brunch or dinner. Add some baked cinnamon/sugar apples and biscuits as sides dishes = YUMMY!

Ingredients

    8 slices of white bread, bite-sized pieces
    1/2 lb. bacon, cooked and chopped
    1 c 2% shredded cheddar cheese
    14 oz can of diced tomatoes, drained well
    3/4 c Egg Beaters
    1.5 cups nonfat milk
    dash pepper
    dash hot sauce

Directions

In sprayed, 2 quart baking dish, arrange 1/2 the bread pieces, bacon, cheese and tomatoes. Repeat once. Combine eggs, milk, pepper, and hot sauce. Pour over casserole. Bake uncovered at 375 degrees for 45 minutes. Toss 4-6 apples in a cinnamon sugar mixture and bake for 5 minutes in microwave, serve with canned biscuites cooked according to package directions. Casserole is 238 calories for 6 servings about 1.5 cups each.
