Cowpeas in red sauce

Introduction

Boil the cowpeas separately.

In another pot, put in the oil, onions and zucchini to fry. When the onions are slightly cooked, put in the tomato paste and and spices (Cajun, black pepper, touch of salt) and add a little water to it and let it fry boil for a while. The consistency should be fairly thick.

Once the cowpeas have boiled, put in cowpeas in sauce and let boil slowly for about 10 minutes on low heat.

Ingredients

    - Boil 4 cups of cowpeas.
    In separate pot put in:
    - oil.
    - the cut up 3-1/2 cups of onion.
    - the cut up 2 medium sized Zucchini.
    - spices (Cajun, Black Pepper, pinch of salt).
    Fry for about 5 minutes on medium heat.
    Add:
    - tomato paste.
    - about half a cup of water.
    - fry boil on medium heat until everything is cooked.
    When cowpeas are ready, you put them inside the sauce with about one cup and a half of the water (depending on the consistency of the sauce) and let it continue simmering on the stove for about 10 minutes.


Directions

Makes about 10 1-cup servings. Freezes well.
