This is my own recipe. Spreads like butter.
2 bags rhubarb (HEB brand 16 oz each 4-4.5cup)
2 c sliced unsweetened strawberries
25 Pkts Truvia sweetener (or other artificial sweetener. This will measure 8 T
1/2 c regular sugar
1 Pkg jello Gelatin (Strawberry, Cherry or Raspberry)
Pour both sugars over the fruit and stir.
Let set for 2 hours - stirring frequently.
(this can sit overnight instead)
Place pan on burner on med high to high heat and bring to a boil. Then let it boil for a minimum of 15 minutes. Longer if necessary but no more than about another 5 minutes. Be careful as the juices SPIT.
Now remove from heat and stir in the jello. Stir it well and pour into canning jars.
This makes about 5 cups. around
