Jerk Tempeh Stir Fry

Number of Servings: 2

Ingredients

    1 pkg. organic soy tempeh (8 oz.)
    1/3 large bell pepper, cut into strips
    1/2 zucchini, cut into sticks
    1/4 c. chopped onion
    1/3 c. carribbean jerk marinade
    jerk seasoning
    salt
    pepper
    olive oil

Directions

In a large non-stick wok, pour about 3 tbsp. of olive oil and turn stove to medium-high. While olive oil is heating, slice tempeh into 1" cubes. Place tempeh cubes in the oil and cook, stirring and turning the tempeh until it is browned on all sides. Season with jerk seasonings.


Add vegetables, salt, pepper, and marinade to the wok, and stir fry until veggies are crisp-tender, about 7 minutes.


Makes 2 servings. We like it as is, but I suppose you could serve it over rice as well!
