FAYE'S OVEN FRIED CHICKEN (better than fried)

Introduction

This is the only way the hubby and kids want their chicken. It's crispy, and not greasy. Very juicy, if you don't over bake it. This is the only way the hubby and kids want their chicken. It's crispy, and not greasy. Very juicy, if you don't over bake it.
Number of Servings: 4

Ingredients

    * Chicken Thigh, 4 thigh, bone and skin removed
    * Olive Oil, 2 tbsp
    * Egg, fresh, 1 large
    * *Egg white, 1 serving
    * Yellow Mustard, .25 cup
    * *Whole Wheat Flour, 1 cup
    * Garlic powder, 2 tsp
    * *Onion powder, 2 tsp
    * *Onions, dehydrated flakes, 1.5 tbsp
    ** Parsley, dried, 2 tbsp (remove)

Directions

Preheat oven to 350*. Wash the chicken under cold water. set aside. in a bowl break 1 whole egg and the white of another egg and add the mustard. whisk well.In another bowl put in the flour, and onion powder, onion bits, and garlic and parsley Flakes. whisk well. on a shallow pan spray with PAM cooking spray, then scatter the olive oil around the pan.
Soak the chicken in the egg mixture for about 3 mins. make sure it's coated well. dip into the flour make sure it's coated, but don't load it on. place down onto the pan and continue untill all chicken has been coated. Spray the top of the chicken with PAM cooking spray.
Place foil over the pan. Place in oven. bake for 20 mins. uncover flip chicken over Use a spatchel so coating comes up with the chicken. Place foil back and bake again for 20 min. uncover and place back in oven until browned on top.Flip it again and brown bottom if it needs it. DON'T OVER BAKE!!!
