Chiplotle Orange Chicken

Introduction

When I visited my first husband's family in Mexico, my mother-in-law made this, and I had to have the recipe. It is a staple recipe still in my household. Number of Servings: 6

Ingredients

    orange juice-enough to cover chicken while cooking
    1 lb chicken-I use boneless skinless thighs, because I like dark meat
    1 red onion sliced into rings
    1-3 canned chipotle peppers-depending on how hot you like it
    1 Tbsp oregano
    salt to taste

Directions

put chicken in a pot and cover with orange juice-you can use whatever kind you have, or sqeeze some fresh-I use frozen, and add the water right in the pot. Bring to boil. Slice the onion into rings, and spred over chicken, add the orgeano and chipotle-salt to taste, and let simmer. I usually serve with mexican style rice.

    I was very impressed.I only used 1 chipole next time I would do 3 I only made one breast. It would be great served with mexican rice. I'll definitly will make it again - 5/16/09

    Simple, good & tasty. I found this by accident but as I love chipotle, I made it that night. I made it mild, but my kids still do not care for "spicy". My husband and I loved it. - 5/16/09

  • confession: I didn't use the chipotle peppers: we don't like spicy things at all. I sauteed the onions in a bit of olive oil first. I made this two weeks ago: my DH requested it again today! And he doesn't like chicken! Thanks for the great easy delicious recipe! - 8/30/10
