Heat olive oil in a large pot. Add crushed red pepper & allow to infuse into oil for a moment. Add vegetables & saute for 5 minutes. Add millet, seasonings, and enough water to cover vegetables. Bring to a boil & simmer for 30 minutes. Remove some of the broth & stir miso into it until it's smooth & all lumps are gone. Pour miso mixture into stew & simmer a few minutes more. May sprinkle chopped scallions on top & add a little bit of hot sauce when serving.
