Roasted Cauliflower

Number of Servings: 2

Ingredients

    1 TBSP olive oil
    3 c cauliflower florets
    1/4 t salt
    1/4 t black pepper

Directions

Preheat oven to 425.

Combine oil and cauliflower in a large bowl, tossing well.

Arrange cauliflower in 1 layer on a jelly roll pan. Bake at 425 for 8 minutes or until crisp-tender, stirring once. Sprinkle with salt and pepper.

Yield: 2 servings.
Serving size: 1 cup.
