Vegetable Quiche Cups

Ingredients

    3/4 cup Simply egg whites
    1 - 10 oz - pk frozen chopped spinach or broccoli
    3/4 cup shredded reduced-fat cheese
    1/4 cup diced red pepper
    1/4 cup diced onion
    dash of tabasco sauce
    dash salt

Directions

Heat over to 350 F, line a 12 cup muffin pan , spray with cooking spray. Thaw and drain spinach, wring it out well by hand, mix spinach, egg whites or substitute, cheese, peppers, onion, hot pepper sauce. Fill the cups with mixture. Bake at 350F for 20 minutes, testing so that a knife inserted in the middle comes out clean. Remove from cups to serve. 1 serving = 2 cups = 73 calories per serving
