Introduction

trippleberry plus extra blueberry and soy protein
very soft moist and smoooooth guiltless muffins.

Number of Servings: 12

Ingredients

    1 pkg Betty crocker tripleberry muffin mix
    1/2c wild blueberries frozen
    20g natureade soy powder
    1/2c water

Directions

Heat oven to 400, 375 for non stick or dark pans. Stir soy powder into water. Add muffin mix and stir until thouroghly mixed (you may need to add another 2tbs or 3 of water, should be the consistency of a cake mix). Drop 1 small cookie scoop into muffin cups, add a level spoon (dinner teaspoon) of blueberries. Place another scant scoop of muffin mix on top. This recipe will yield 12 small muffins, 9 regular size (level ice cream scoop) or six overfilled large. For the small muffins bake12-14 mins or until toothpick comes out clean and tops are slightly browned. Add more time(16-21min) for larger muffins.
I choose small for portion control...no guilt over eating 2 and they are kid sized to boot!
