8 c. diced rhubarb
1 c. granulated sugar
3 T. all-purpose flour
1/2 c. brown sugar
1/2 c. old-fashioned oats, uncooked
3/4 c. all-purpose flour
1/2 c. Earth Balance margarine
For topping, blend brown sugar, oats, 3/4 c. flour, and margarine until mixture is crumbly. Place rhubarb in 7 x 9 inch baking dish. Top with crumbly mixture.
Bake in a 375-degree oven 45 minutes. Makes 6 servings.
