Ingredients

    1 cup flour
    1 c oats(old fashioned)
    1 teaspoon baking soda
    1/2 teaspoon salt
    1 teaspoon cinnamon
    1/2 cup unsweetened applesauce
    2 egg whites
    1/2 cup sugar
    1/2 cup water
    1 c blueberries, frozen

Directions

Spray a 12 cup muffin tin and preheat oven to 350. Mix flour, oats, soda, cinnamon and salt together. Add applesauce, sugar egg whites and water, mix until just blended. Add in blueberries. Bake at 400 for 20-25 minutes or until tops have lightly browned.

    My kids devoured this muffins in a matter of hours! I substitued blueberry applesauce and it only enhance the deliciousness in each bite. I also added a 1/4 cup of ground flaxseed to enhance the fibre content. Happy Baking! - 3/3/11

    They were super easy to make. Hardly any mess to clean - just one bowl (I used muffin cups). I substituted fresh blueberries, whole wheat flour, and one whole egg. - 7/6/10

    These were really good! I bought sweetened apple sauce by accident so i just didn`t add any more sugar to it and they came out wonderful and really tasty for a fast breakfast. Thanks! - 1/29/10

    Used 1 whole egg and 1.5 C. blueberries - more dense, but still delicious! Directions had two temps listed, I chose 400 degrees for 20 min. Thanks for great sweet tooth satisfaction! - 1/31/14

    Loved this recipe! Brought it to my book club meeting and it was a hit! I used whole wheat graham flour to add more fiber. I also doubled the blueberries and substituted Splenda for the sugar. I'll Make this one again--maybe try with frozen strawberries next time. - 5/15/10

    Just put them in the oven. I used about an extra 1/8 cup sugar and the batter tastes very sweet. If they turn out yummy, we're making a batch for the neighbors and company. Love the oats and applesauce!

    Loved these!! Some changes I made: I didn't have applesauce, so I substituted 1tbps coconut oil, and 1/3 of a banana, mashed. I used brown sugar instead of regular, and only used 1/4 cup. Almond milk in place of the water. And one whole egg instead of the whites. 106 calories. - 7/27/14

    Have made this recipe twice and loved it. This time I replaced the cinnamon with orange zest, the water with the juiced orange left after zesting and the blueberries with dried dates. Delish. - 10/27/13

    This was a good recipe and I will make it again, but it could likely be tweaked into something great. It was a little dense and stuck to the cupcake papers. I might try to get it a little fluffier next time. But there will be a next time - it's worth making again. - 10/11/12

    I kept the temperture at 350 but they came out looking not quite done. They stuck to the cupcake papercups. The taste was alright. I may try again using 400 temperture. - 8/26/12

    I used whole wheat flour, added vanilla extract, and didn't have applesauce so I mashed up a few very ripe bananas and used those instead! Oh, and I used milk instead of water! - 7/1/12

  • These are delicious! They aren't the same texture as usual blueberry muffins, but they taste good and you feel good eating them. I used a whole egg instead of 2 whites and it turned out good. Might try adding the flax seed next time. I recommend this! - 2/28/12

  • These are delicious. I prefer muffin cups and as someone else said they come out very moist and gooey. You lose most of the muffin to get them out of the muffin cups. I will make again without the cups. Does anyone have another suggestion so they won't stick? - 3/8/11

  • These were excellent. Nice texture and tasted great. The only changes I made were adding 1/2t vanilla and I ground the oats into oat flour because I didn't think my kids would like the texture. Mine were a little overbaked-- recipe says to preheat to 350, but last sentence says bake at 400. I did 400 for 17 mins and they were a little overdone. - 7/14/09

  • Good, but very moist and dense. I'm allergic to eggs so I increased applesauce to 3/4 cup, added 1/2 tsp. lemon zest, 1 tsp. baking powder, 1 tsp. vinegar trying for rising action. Didn't work well, will modify again. Also found old fashioned oats too course, I'll use quick oats next time. - 6/19/09
