IntroductionI make this a lot, it is so quick and simple, the whole family loves it. I make this a lot, it is so quick and simple, the whole family loves it.
1 tbl extra light olive oil
chicken breast no skin
1 clove garlic sliced
.25 cup sundried tomatoes
Pasta cooked 12 oz
2tbl grated parmesan cheese
Add chicken and saute until browned and cooked through.
Transfer chicken to a large bowl with slotted spoon.
Add garlic to pan and saute briefly
Stir in the sun-dried tomatoes and cook for 2 minutes.
Toss pasta and chicken through tomato mixture.
Sprinkle with remaining oil, stirring through.
Top with parmesan cheese and serve immediately.

sorry, I use x1 chicken breast/person and slice it thinly, removing any skin left and the yucky bits there. usually works out to 1/2 chicken breast/person
