5 cups of water
3/4 c red lentils
2 large cloves garlic, minced
3 tablespoons extra virgin olive oil
1 14.5 oz can of diced tomatoes with liquid
1 tsp salt
1/2 tsp pepper
1/2 lb of penne pasta
1/4 cup fresh basil, chopped
Add garlic, olive oil, tomatoes, salt and pepper. Reduce the heat, cover and cook for 7 more minutes stirring occasionally. While this is cooking boil the penne for 7 minutes. When the pasta has boiled, drain it then add it to the lentils and tomatoes.
Simmer for 5 more minutes till pasta and lentils are tender.
Makes 6, 1.5 cup servings.
